How do creators handle income that arrives in bursts?

Campaign work, festival season and a video that unexpectedly performs all produce the same problem: a spike followed by a trough, against tax deadlines that do not move. Payments on account are the trap — each is half your previous year's tax bill, due on 31 January and 31 July, so a breakout year is followed by demands calculated on it even if this year is quieter.
